strawberry Chia seed pudding + yogurt parfait

I think of Summer fruit and I think of strawberries, blueberries and watermelon. Those are my absolute favs. I can't get enough of them. There might be a blueberry lurking in my kitchen along with a chia seed sprouting somewhere.

Anyway, I also can't get enough of greek yogurt. I feel like I should start a Greek Yogurt Diaries/Parfait book. 

Okay, onto the important stuff.

I hope you enjoy this recipe. My goal is always making food simple, real, and delicious. This particular one is also sweet & creamy. Perfect Summer treat!  

RECIPE

strawberry chia seed pudding parfait

SERVES: 2 (4-6 ounce portions)

EQUIPMENT: nutribullet or a blender

INGREDIENTS: 

  • 3 Tablespoons chia seeds
  • 1 cup Almond milk {or alternative}
  • 1/4 Cup Greek Plain yogurt {you can substitute coconut greek yogurt here}
  • 1 Cup strawberries {+ more for decor and topping}
  • Honey {optional for a little hint of sweet}

TO CONCOCT:

  1. Make the Chia Seed Pudding by combining the chia seeds and almond milk or water. Mix and refrigerate for at least 1 hour or overnight. 
  2. Combine yogurt and strawberries and blend til a nice creamy puree is made. 
  3. Place a layer of greek yogurt on the bottom of a cute dish. Top with some strawberries, add the strawberry parfait layer, then top with strawberries to make it look good and fancy. 

MAKE IT MORE AWESOME:

Top the parfait with some blueberries if you want to toss a little blue in there and why not add some lemon zest while you're at it.
